Chef Olivier is going to demonstrate that it's just a myth; that it's really easy when you follow the technique; le technique de Chef Olivier." - @djlinterna 🙌⁣ ⁣⁣⁣⁣⁣⁣ YOU'LL NEED 📝⁣⁣⁣⁣⁣⁣ ⁣ TO COOK THE OCTOPUS:⁣ 💦 4 fresh (or frozen and thawed) octopus tentacles⁣ 💦 2 celery stocks⁣ 💦 1 white onion⁣ 💦 8 cloves of garlic ⁣ 💦 10 litres of water⁣ 💦 Salt as need⁣ ⁣ METHOD:⁣ Rinse the octopus thoroughly with cold water. Cut all the vegetables and put them in a big pot of salted boiling water. Dunk octopus three times, then simmer over low heat until tender and cooked through (1 hour). Using a strainer, drain octopus and then run cold water over it to cool it down.⁣ ⁣ FOR THE TOSTADA:⁣ 🐙 2 corn tortillas⁣ 🐙 2 cooked octopus tentacles, sliced⁣ 🐙 ½ avocado⁣ 🐙 1 tbsp white onion, julienned⁣ 🐙 1 tbsp tomato, diced⁣ 🐙 1 tbsp of lime juice (approx. 1 lime)⁣ 🐙 1 tbsp olive oil⁣ 🐙 ½ litre of canola oil to fry the tortillas⁣ 🐙 Tajin, to taste⁣ ⁣ FOR THE TACOS:⁣ 🌮 2 cooked octopus tentacles, sliced⁣ 🌮 3 corn tortillas⁣ 🌮 ½ avocado⁣ 🌮 3 garlic cloves⁣ 🌮 1 dried guajillo chile⁣ 🌮 1 lime⁣ 🌮 2 tbsp tomato, diced⁣ 🌮 1 tbsp fresh parsley, chopped⁣ 🌮 2 tbsp olive oil
