Horchata (pronounced or-CHAH-tah), which originates at least as far back as the 13th-century, is a sweet and refreshing traditional Mexican beverage. There are lots of variations, but pretty much all of them have rice as the base, cinnamon for flavour and sugar for sweetness.

1.5 cups white rice
1/4 cup blanched almonds
1 1/4 cups sugar
1 tsp cinnamon
1 cup oat milk (or preferred milk)
Soak everything for 24 hours.
After 24 hours, blend everything with a blender, Magic Bullet or hand blender.
Strain with a fine-mesh sieve or a cheesecloth.
